Roughly grate the courgette and leave in a bowl and sprinkle with salt. Leave for 20 minutes to draw out the moisture, then squeeze out the excess liquid.
Roughly grate the halloumi and chop the herbs.
In a large bowl combine the courgette, halloumi, herbs, egg, chilli powder, flour and a pinch of salt. This should form a thick batter.
Heat a good glug of vegetable oil in a large pan over a medium heat. Using a spoon, scoop the batter into the pan and fry on both sides until golden and crispy.
Serve with tzatziki while hot and crispy. Enjoy!
