Roasted Garlic

Making mashed potatoes, a sauce, or soup? Roasted garlic will infuse it with wonderful rich flavour.

What you'll need…

  • 1 whole garlic bulb
  • Extra virgin olive oil, for drizzling
  • Sea salt

The method

Preheat the oven to 180°c

Trim the top ¼ inch off the top of the garlic bulb.

Place the garlic cut-side up on a piece of foil, drizzle with olive oil, and sprinkle with salt. To keep the garlic upright (cut-side up), use a small baking dish or ramekin.

Wrap the garlic in the foil and roast for 40 to 60 minutes or until the cloves are deeply golden brown and tender.

This works great in any recipe (like mashed potatoes or cauliflower mashed potatoes) that calls for roasted garlic. It also freezes well!
