Serves - Use to spread on bread or to add extra flavour to any dish.
Wash the wild garlic thoroughly, then roughly chop and set aside.
Dice and then melt 100g of the butter in a saucepan over a gentle heat.
Add the wild garlic and cook for about 30 seconds, just until wilted.
Transfer the wilted garlic to a blender or kitchen mixer.
Add the remaining diced butter, sea salt, and white pepper.
Blend until the butter is smooth, bright green, and fully combined.
