Broccoli and Kale Bake

A good way to use your kale or cavolo nero. Leave the sausage meat out to make a vegetarian alternative

What you'll need…

  • 1 head of broccoli, in florets
  • 125g kale or cavolo nero, stem removed and leaves sliced
  • 1 tbsp olive oil
  • 200g sausagemeat
  • 400g cheese sauce
  • 50g cheddar
  • to make the cheese sauce:
  • 40g butter
  • 40g plain flour
  • 400ml milk
  • 60g cheese

The method

Bring a pan of water to the boil and cook the broccoli for approx 5-6 minutes, adding the kale for the final minute. Drain

Heat the oil in a frying pan, add the sausage meat, breaking it up. cook for about 5 mins until brown all over.

To make the cheese sauce: Melt the butter in a saucepan, remove from the heat and stir in the flour. Put back on the heat for 1 minute, stirring continuously. Remove from the heat again, then add the milk, whisking it in bit by bit. Return to the heat and bring to the boil whilst stirring. finally stir in the cheese.

Heat oven to 200C, put the broccoli and kale in a baking dish, pour over the cheese sauce, season and mix together. scatter the sausage meat and cheese over the top and bake for 30 minutes until bubbling and golden.
