Eating your greens the Greek way

Preheat oven to 180°C.
Finely chop the garlic and put it into a medium pan on a medium heat with the butter.
Once the butter has melted, add in the flour to make a paste, then gradually stir in the milk until smooth.
Chop the broccoli (remember you can use the stalk too), and add into the sauce and simmer for around 20 minutes until it is soft and breaking apart.
Once tender, grate in half the cheddar and season to your liking. Use a stick blender to whizz the mixture (add milk if too thick) until smooth.
Chop your cauliflower and arrange into a baking tray. Pour over the broccoli white sauce and sprinkle over the remaining cheddar.
Blitz the bread into breadcrumbs, adding in the thyme, olive oil and seasoning. Sprinkle over the cauliflower and bake for one hour or until golden! Enjoy!
