An easy to prepare but tasty way to get your greens!

Heat the oven to 200C. Wash the spinach and put over a medium heat to wilt, using just the water that clings to it. Once wilted squeeze out any excess liquid.
Crush the garlic clove and put it in a pan with the cream. Heat though over a medium heat until not quite boiling. Set aside for now.
Grease a dish with butter and spread half the potato slices on the bottom of the dish. Lay the spinach on top of the potatoes, then top the spinach layer with the remaining potato slices.
Pour over the cream, then top with cheese, before baking for 45-50 minutes until golden. Delicious!
