Celeriac Stuffing
Perfect with Chicken, Turkey, or Squash as a vegetarian alternative!

Pre-heat your oven to 180°C. Chop your pumpkin in half and scoop out the seeds. Rinse them to remove any flesh and pat dry with a tea towel.
Spread out the seeds onto a baking tray and drizzle with a little olive oil. Season to your liking and add any spices you may wish. Toss to ensure they are well covered.
Place into an oven for 10-15 minutes, stirring half way through, and remove once they are golden. Allow to cool and enjoy!
