Leek and Feta Tart

Perfect for those weekend lunches

What you'll need…

  • 2 Leeks
  • 500g Shortcrust pastry
  • Knob of butter
  • 100g Feta
  • 200ml Double cream
  • 100ml Whole milk
  • 4 Large eggs

The method


Pre-heat your oven to 170°C. Then slice your leeks.


Line a 23cm tart case with shortcrust pastry and line with baking paper, fill with baking beads and blind bake for 20 minutes. Remove the baking beads and paper and return to the oven until the base is crispy and golden.


Melt a knob of butter in a frying pan and add in the leeks. Fry until soft and season to taste.


Arrange the leeks into the tart case and crumble over 100g of feta.


Whisk together the double cream, milk, 2 eggs and 2 egg yolks. Season, then pour into the case.


Bake in the oven for 25-30 minutes until it has set and has a slight wobble. Allow to cool, then serve. Enjoy!
