Stir Fried Sprout Tops

Don't waste the sprout tops!

What you'll need…

  • 60g Brussels sprout tops
  • 1 Onion
  • 1 Garlic clove
  • 2 Spring onions
  • 1 Teaspoon vegetable oil
  • 1/4 Teaspoon chilli flakes
  • 1 Teaspoon sesame oil
  • 2cm Cube ginger
  • 1 Tablespoon soy sauce

The method

Prepare your ingredients. Shred the sprout tops, and then finely chop your onion, garlic, spring onions and ginger.

Heat the oil in a pan over a medium heat. Add in the chopped onion and chilli flakes and cook until they begin to soften.

Add in the sprout tops and stir fry for 5-7 minutes until they begin to wilt. Push to one side and pour in the sesame oil into the empty side of the pan. Add in the garlic and ginger and fry for 30 seconds in the sesame oil and then stir in with the sprout tops.

Cook everything for 1 minute, then add in the soy sauce and stir. Remove from the heat and tip with spring onions and serve with rice or noodles. Enjoy!
